Sasa is a terrific cook and usually would rather be in the kitchen, happily concocting recipes, than anywhere else. But tonight, the little one and I kicked him out and decided to make up our own delicious supper. This recipe is straight from my head, made up as I went. And it is so good that I decided to share it with all of you...
What You'll Need:
~bag of baby spinach
~half an onion, sliced in thin strips
~olive oil
~3 tbs. raisins
~2 tbs. toasted pine nuts
~4 tbs. soft goat cheese
For the sauce:
~1 tbs. olive oil
~2-3 tsp. dijon mustard (for your gluten-free readers, make sure there is no "grain vinegar" in yours)
~2 tsp. rice vinegar
~ a little lemon juice
Pour some oil in a big skillet. Cook thinly sliced onion on low heat until transparent. Add spinach and cover for a couple of minutes, stirring every once and a while. When spinach is done, turn heat off and add raisins, pine nuts, and goat cheese.
Now, get your sauce ready. Just mix all ingredients and pour over the spinach. Serve over rice and for some extra protein, add a side of grilled chicken. Yum!
