We've been doing a lot of this lately. I love how Sasa comes home for lunch everyday and we all get to eat three meals together daily. The pack porch is seeing many picnics. Today I made a salad with mesclun mix from our friends farm and garlic scapes from another friend's garden. Thanks friends for keeping us well fed!
Tonight I made up a salad using greens from our very own garden! They were so delicious. The little one has been picking peas like crazy and eating them before I get a chance to taste one! The lettuce was another hit tonight. Here's my yummy salad recipe ::
Bluebirdbaby's Summer Salad ::
- fresh peas (about 3/4 pound of shelling peas)
- 1 green pepper chopped
- 1 cucumber thinly sliced
- 1-2 carrots cut with julienne peeler
- 1-2 tablespoons of minced cilantro
- 3 tablespoons of mayo (or less...I just LOVE mayo!)
- 1 tablespoon olive oil
- 1 tsp lemon juice
Mix the dressing and toss the veggies with it. Serve of a bed of lettuce. YUM!
